I get it, training chefs on all the variations of sushi is no small task & if you are not the expert & lets face it, you've got 20 other things to do today, rarely are your chef's going to take it upon themselves to learn/train themselves. I can offer training on a variety of specialty fish and how to prepare them... chances are, if you are not offering stuffed tomoatoes, ankimo, aji, ama ebi, live sea urchin & so on, it's simply because no one at your restaurant knows how to prepare them!
